Hi friends! It’s Sunday Funday … so, what’re ya up to today? I taught a Restorative Yoga class thing morning and had a fabulous turnout! We added the class at the beginning of December and it was rough getting people to latch onto the idea of sloooooowing down (prob especially during that busy month) but today we ran out of props! Like totally. That made my heart happy! 🙂
I’m so excited because tonight my love is coming home. He was in Vegas for just 36 hours last week, but he went to Portland to visit his momma and sister over the weekend and I’ve missed him so! There have only been a handful of times we’ve spent weekends apart in our nearly 2 years of dating. (Like, seriously, I can count 6 off the top of my head and that’s it.) I’m not saying that I can’t live without him or anything, but I am saying that I don’t like it. I get enough of a ‘break’ from him when he goes to his office in Vegas—and to be honest, I hate ‘breaks’ from him—so I don’t look forward to any additional times he leaves. I am looking forward to the day we can close his law practice, though.
My birthday is in three weeks + 1 day (not that I’m counting down or anything), but since we’ll be out of the country my mom and sister sent my present early. I love it! The brand is Alaffia and my sister is actually going to do a guest post about them while I’m vacation. They’re such a great company and I’m happy to sport my new bag around town!
If you follow me in Insta, you may have seen that the farm stand had strawberries last Wednesday (along with the other 78 strawberry pics I’ve posted since). When I stopped by after teaching yoga yesterday, they had more! As I was snapping this pic, another customer was like, “Don’t do that! Then everybody will know!” haha. The locals told me they aren’t usually ready to be picked until February. I’ve only tasted strawberries this fresh once before, and that’s when A and I picked them while on a trip in B.C., Canada.
I did a bit of meal prep this morning: cubed and roasted a sweet potato and a couple small golden potatoes, washed the produce I picked up yesterday, made some rice and fulfilled A’s request of chocolate covered strawberries …
I also made this delicious ‘salsa’. I just made it up. My friend uses this hashtag, ‘#imakethingsupasigo’ and I love it! That’s how I roll in the kitchen, too. I mixed in some mango, strawberries, green onions and jalapeño. It’s so refreshing!
Meal Ideas for the Week
If any of these things knock my socks off, I’ll be sure to share the ‘recipe’ with you. 😉
- black bean + sweet potato tacos
- another veggie bowl similar to what’s pictured above with rice, zucchini, mushrooms, carrots, onions, avocado, broccoli
- spaghetti squash noodles + sautéed veggies + homemade peanut sauce
Related: I’m going to try to make a “cheese dip” without cheese, too. I have absolutely zero expectations. I love cheese sooooo much, and can’t imagine anything tasting remotely like cheese, especially a vegetable. But, my mind is open. I’ve done some research. We’ll see how it goes.
